I have been wanting to host a tea party type of event and this year Easter was the perfect occasion. We were just having a couple of people over so I did all sorts of small bites. So fun and classy! The cucumber rounds were one of my faves! They were so light and refreshing and reminded me of the typical cucumber sandwiches you would have at a tea party, minus the rye bread. These are definitely the perfect snack for bridal showers, baby showers, or an afternoon tea.

INGREDIENTS
8 oz block of cream cheese, softened
1/4 c fresh dill (or 1 tbsp dried)
2 tbsp dill pickle juice (just the stuff form the jar)
3/4 tsp onion powder
1/2 tsp garlic powder
pepper
1 green onion, finely chopped
1 cucumber, sliced
parsley to garnish (optional)

STEPS

  • In a medium bowl beat together the cream cheese, dill, pickle juice, onion powder, garlic powder, pepper, and green onion until smooth.
  • Transfer the mixture to a pastry bag or a Ziploc bag.
  • Pipe the herbed cream cheese mixture onto each cucumber round.
  • Garnish each cucumber with a sprig of parsley on top.
  • Serve immediately or cover and store in the fridge until ready to enjoy.

  2. One of my fave ‘fun bites’ to take when I’m invited to a co*cktail Party (especially in the Summer), always get raves and they get quickly eaten up. Sometimes I’ll just blend in Boursin (with herbs) with the cream cheese, when I’m feeling lazy. I also scoop out the seeds on each slice, leaves more room for that tasty filling. CHEERS, CC

    1. I personally love the little bite that the pickle juice adds but if you really want to make a substitution then perhaps a little splash of white vinegar. You definitely want to add some sort of liquid as it helps make the consistency of the filling easier to work with.

    1. Sorry for the delayed response! Yes I do use both parts. Or you can just use the greens and put the whites in water and regrow them. Here is a great post I have on regrowing green onions from your kitchen scraps. 🙂

  5. About how many people does one cucumber serve?

    1. I would guesstimate that 1 large cucumber makes about 25 slices, so that would be about 3 per person if you had 8 people. I think it truly depends on how many other dishes you will be serving.

  6. How many does this make if using an English cucumber? I need 50-60 appetizers and need to know if I need to double or triple this. Please advise

      1. I have a feeling that by the time you are done beating in all the other ingredients that you will loose that light “airiness” that whipped cream cheese usually has. I would be concerned that the texture may be off since you won’t have the density of regular cream cheese. I would stick with regular cream cheese. However, should you decide to use whipped let me know how it goes. I would be interested to know.

    1. Depends on the cucumber size. I would say 15–25 slices.

  13. Does it make a difference which kind of cucumber you use?

    1. I use a regular cucumber so that the slices are a bit bigger and easier to work with but you really can use any cucumber. If you want to make a sandwich with the spread and cucumber slices then you might want to use something with no seeds since the pulpy area in the middle with the seeds hold more moisture and can lead to soggy sandwiches if you are making them ahead of time.
