Keto Cornbread Ingredients
- 10 tablespoons unsalted butter, melted
- 1 1/3 cup almond flour
- 4 eggs
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon corn flavor extract (optional)
- 1/2 teaspoon cajun seasoning (optional)
- 1/4 teaspoon cayenne pepper (optional)
Keto Stuffing Ingredients
- 6 slices bacon
- 1/2 pound of chicken gizzards
- ½ cup diced onion
- 1 cup chopped celery
- ½ teaspoon salt
- 4 cloves garlic, minced
- 2 tablespoons minced fresh sage (2 teaspoons dried)
- 1 tablespoon thyme (1 teaspoon dried)
- ½ cup chopped parsley
- ½ cup chicken broth
Keto Cornbread Stuffing Directions

Make cornbread
To make the keto cornbread, add all cornbread ingredients to a medium bowl and mix until combined. Pour batter into a greased, square 8x8 baking dish. Microwave for 6-8 minutes (depending on your microwave) until the bread is set and not wobbly in the center. Or bake in a 350 degree oven for 14 minutes or until cornbread has risen and not wobbly in the center.

Cube the bread
Cut cornbread into cubes and spread onto a large parchment lined baking tray. Broil over high heat to toast, turning after toasting for a couple minutes on each side. Remove from oven and set aside.

Fry up bacon
In a large skillet, cook bacon until crispy. Remove and set aside.

Yum, chicken gizzards
Add chicken gizzards, cook until cooked through (3-4 minutes). Remove and set aside.

Sauté vegetables
To the skillet add onion, celery, garlic and salt. Cook until softened. Remove from heat.

Mix the stuffing
Add vegetables to a large bowl. Chop up bacon and chicken gizzards into small pieces and add to bowl. Add in sage, thyme and parsley. Mix in cubed cornbread.

Bake
Add mixture to a casserole dish. Cover and refrigerate until ready to cook. When ready to cook, pour chicken broth all over dressing mixture and bake at 325 degrees for 20-30 minutes. You can also stuff inside your Turkey or Goose.

This low carb cornbread can be made in one bowl, mixed together with a fork or spoon and baked in the microwave for about 6-8 minutes. However, I do give you instructions for baking the cornbread in the oven if you don’t have a microwave.
I like to add a little bit of cajun seasoning and cayenne pepper to my keto cornbread for a different flavor.
Cornbread Flavoring

It’s not necessary to use cornbread extract as this keto bread recipe is delicious without it. But it does give it that real cornbread flavor.
Chicken Gizzards
This is an optional addition to your keto stuffing, but I recommend that you do add it. For one, chicken gizzards add a lot of flavor to your dressing. Gizzards are considered an organ meat and have other benefits to them as well.

Make Ahead Instructions
